2 Ingredient Pumpkin Bread & 2 Week Blog Break


With all those 2s in the title, I keep wanting to start singing, "It takes two-oooo, baby!"

Because that's how my brain works.



But anyway! I leave next week for my work trip slash few days off in Amsterdam and then Paris so this week's blog post is a simple, 2 ingredient recipe to get you ready for Fall in a (gasp!) 2 weeks.

I cannot believe my epic trip is actually HERE! I've gone to Amsterdam for the past two years to manage this trade show (IBC) so this is nothing new. And just like past years, I will be reunited with Anna and Florian for a few days of work-free fun.  We have been talking about this trip for the past year, probably since we last saw each other - this time last year!


In previous years, Anna & Flo have met me in Amsterdam, then I have taken the train down to Bonn, Germany to visit with them, and now? Now we go to Paris! During this epic and nearly 2 week long journey, I will be taking a little blog break but don't you worry, my peanuts. I will be back in action the week of the 25th to share all the fun we had in Paris!

This year will also be super fun because Cody will be joining me to visit Amsterdam for the first time! I fly out on the 12th on my own, start the show on the 15th, and then Cody flies out on the 17th, explores Amsterdam a bit on his own while I wrap up the last two days of the show, then on the 20th, we have a day together in Amsterdam, and then on the 21st through the 23rd, we are in Paris with Anna and Florian for what may be the most epic double date in history.

We are extremely excited to say the least.


Just like I am excited to be sharing my first pumpkin recipe of the season! Ready or not, fall is around the corner. I just want to make sure you are well equipped with pumpkin options because, honestly, what else is Fall good for? Besides cooler weather, apple crisp and cider, and the promise of THE BEST HOLIDAYS EVER!


Essentially, I am only happy in the months that end in BER.

So this recipe. It's the world's most simple pumpkin bread. Ever. Like, EVER. Made with just 2 ingredients, the pumpkin bread comes together in a matter of seconds. Once baked, you've got yourself a loaf of Fall perfection that is scrumptious as is or can be upgraded to another level with a SUPER simple 3 ingredient icing (provided below with the bread recipe).


So there you have it - 2 ingredient pumpkin bread with a 2 ingredient icing to kick off my 2 week blog break while I visit 2 European countries to reunite with 2 special people...

Ok, what is WITH the 2s? I think I better go play the lottery...

2 Ingredient Pumpkin Bread

Pumpkin Bread:
  • 1 box spice cake mix
  • 1 can (14 ounces) pureed pumpkin
Icing (optional):
  • 1 cup powdered sugar
  • 1-2 tablespoons milk (I used almond milk)
  • Pinch pumpkin pie spice (optional!)
  1. Preheat oven to 350 degrees F. Spray or grease a loaf pan and set aside.
  2. In a medium bowl, mix the contents of your spice cake mix with your pureed pumpkin. DO NOT ADD INGREDIENTS LISTED ON BACK OF CAKE BOX!
  3. Bake for 55 min - 1 hour or until toothpick inserted into center comes out clean.
  4. Cool completely.
  5. For your icing, mix powdered sugar, vanilla, and milk (1 tablespoon at a time) until spreadable. This should thicken as it sits.
