Quick & Dirty Rum Cake Balls for St. Patrick's Day!


Happy March, my peanuts! This post is for my St. Patrick's Day lovin' friends!

I am often teased by my co-worker and good friend, Jamie, that I put all my energy into Halloween, Christmas, and Valentine's Day but then drop the ball for St. Patrick's Day, which is one of her favorite holidays. Well, she's totally right! So what if I'm the farthest thing from Irish? A holiday is a holiday and every holiday is worth celebrating, dammit!


Cody also enjoys St. Patrick's Day. In fact, in our early years of dating, we spent quite the St. Paddy's in Providence with Andrew and Red, hotel room and all. Oh the memories we have of that night!



So since I promised Jamie to make more of an effort this year and agreed to decorate our cubicles with shamrocks and leprechauns galore, I decided to take it one step farther and also create some yummy treats for the occasion as well! Just for Jamie. Because, you know, it's only fair.


Since St. Paddy's is a holiday widely known and accepted as a day of drinking and debauchery (and since Cody appreciates good rum), I knew what I had to do. I mean, what better to make than something sweet, boozy, and therefore, totally inappropriate for the office!?


I had some leftover Sara Lee frozen pound cake from Cody and my fondue Valentine's Day dinner at home so I simply thawed out the remaining cake, got a bottle of Cody's favorite rum, snagged some St. Paddy's themed decorations, and got to work.


Now, it's up to you if you want to risk bringing these to work for your colleagues. I am not responsible for any drunk co-workers nor am I to blame if you lose your job. Perhaps, these are a casual Friday treat.


Oh and would you look at that - St. Paddy's falls on a Friday this year!


Well, I know what Jamie and all our co-workers will be doing on the 17th now!

Quick & Dirty Rum Cake Balls
  • 1 store bought pound cake (I used Sara Lee)
  • 1/4 cup of your favorite rum (I used one of Cody's favorites, Pilar)
  • 2 bags white and/or green Milton candy melts
  • Festive sprinkles for decorating

Cooking Directions
  1. If you bought a frozen cake, thaw completely.
  2. Crumble your pound cake into a large bowl with your hands (a food processor could work, too, but it may just take awhile to get all of the cake crumbled).
  3. Moisten your crumbs with the rum of your choice - it's hard to measure here exactly. You want the crumbs to be wet enough so that you can roll them into balls but not so wet that they are dripping! I suggest adding rum slowly until you find a good consistency.
  4. Roll your cake into balls with your hands.
  5. Melt your white chocolate or candy melts in a microwave safe bowl, according to directions of package (mine melted in 1 minute).
  6. Dip each rum ball into the melted chocolate and rest on wax paper to harden.
  7. Top with sprinkles, if desired, and either leave balls at room temperature to harden or pop into the fridge.
  8. Enjoy responsibly with all your Irish friends!
