Magical Chocolate Pumpkin Muffins


Is it too soon to climb aboard the delicious pumpkin train straight into Fall? Yes? TOO BAD!

I'm sorry - I know some of you love summer and love the heat and being sweaty messes (side note: are you all insane?), but I am so so excited that we are in the tail end of September and that fall is around the corner. Maybe, just maybe, it will even cool down soon!


I'm not talking blizzards, people - just some crisp breezes, ankle booties, changing leaves, apple cider. and PUMPKIN EVERYTHING!

Anyway, ready or not, here comes a super easy (and magical) pumpkin treat!

Did you know that 1 chocolate cake mix + 1 can of pureed pumpkin = muffins?

Well today is your lucky day!


These two items are all you need to get some yummy muffins in your life - it's kind of magical. And if you're like me, you'll just do yourself a favor and add some chocolate chips to the mix. Because - WHY WOULDN'T YOU?


To be honest, these muffins are totally more on the chocolate-y side than the pumpkin-y side. I do not see that as a problem, though, because they are SO rich and SO scrumptious! They're super fudgy and luscious. That  being said, if you wanted to amp up the pumpkin flavor a bit, I'd suggest adding a teaspoon of pumpkin pie spice - I added it below as optional. I am totally doing that next time to get the pumpkin train really moving along.


Truth time - I actually made these muffins weeks ago. As most of you know, I'm currently away in Europe for the past week. I was in Amsterdam for our tradeshow, IBC, and as this post goes live, I am taking a train down to Germany to visit my boo, Anna for a few days. There will be more on that in the coming weeks on the blog! So keep an eye out!


Anyway, in preparation for my travels, I locked in as many posts as I could in advance so I didn't have to worry about it when it came time to take off - this post included. My co-workers were a bit baffled as to why I had pumpkin treats to share in August but they got over it in time to enjoy a muffin or two. I didn't hear any complaints once a bite was taken!


I get the sense you will summer lovers will have a similar experience if you give these a try soon...

Magical Chocolate Pumpkin Muffins
Adapted from Spoon University

Ingredients
  • 1 can pureed pumpkin
  • 1 box chocolate cake mix
  • 1 teaspoon pumpkin pie spice (optional)
  • 1 cup chocolate chips
  1. Preheat oven to 350 degrees F and line muffin tins with liners or spray with non-stick spray.
  2. In a medium bowl, mix the pureed pumpkin and cake mix until combined.
  3. If you're opting to, add the pumpkin pie spice.
  4. Stir in your chocolate chips. 
  5. Spoon batter into muffin tin 3/4 of the way.
  6. Bake for 18-20 minutes or until toothpick comes out of the center clean.
  7. Cool completely before shoving muffins into mouth one at a time.
